【Only Ground Meat】Very Easy! How to Make Clear Base Soup for Ramen【Recipe】

I enjoy making Ramen at home!

Some of you may think that some ingredients for Ramen such as chicken bones and pork bones are not available in the supermarket in your neighborhood. Don’t worry. You can make base soup for Ramen using ground meat instead of bones. In fact, Base soup for Ramen made from bones extract meat taste from meat which is slightly left on the bones, so base soup made from only meat is not very different from it.

This time, I’ll introduce how to make clear base soup for authentic Ramen from “ground chicken“, “ground prok” and a bit of ginger. It takes only 1 hour. You can make this base soup from familiar ingredients, so I highly recommend it to homemade Ramen beginners. Let’s get started!

Ingredients(3 Portions)

・water 1400cc
・ground chicken 200g
・ground pork 200g
・several slices of ginger

I recommend meat without too much fat like chicken breast meat or tender.

Steps

1. Put Water and Ground Meat into Pot

2. Heat it over High Heat

Bring it to a boil over high heat. Please scrape the bottom of the pot with a wooden spatula to prevent the meat from sticking to it while boiling.

It’s come to a boil.

3. Once it’s Come to Boil, Turn Heat down to Medium and Skim off Foam

After It’s come to a boil, turn the heat down from high to medium or low. You’ll see the surface of boiling water gently burbling. After a while, some dark foam will be rise to the surface.

Skim the foam off patiently.

4. Keep Simmering until Soup Becomes Clear

Keep simmering the ingredients for about 30 minutes until the soup becomes clear. Don’t forget to stir the soup and scrape the bottom of the pot with a wooden spatula sometimes.

5. Put Ginger into Soup and Simmer Them for 15 Minutes

Finally put slices of ginger into the soup and simmer them for 15 minutes.

6. Strain Soup with Strainer

Turn off the heat after about 1 hour cooking. Strain the soup with a strainer.

It is clear base soup with plenty of meat taste. It’s completed!
※I always use ground meat taken for the soup for other dishes.

Please adjust the quantity of the soup with water. Make it 1000cc, which is for 3 portions.
